Konafa and Atayef are desserts that are only available during Ramadan. As soon as the month starts, little stalls pop up in neighbourhoods all over Cairo where busy men ply the traditional craft of baking the basic ingredients, the long konafa strands and the small pancakes for atayef. The pancakes are sold per piece and the konafa by weight and in many homes they are transformed into the sweet desserts that conclude many Iftars.
